Happy February! It’s the month of love! And since this is the month of Love, I am sharing a comfort food recipe filled with lots of self-indulgence and self-love goodness… and it’s good for you! The oatmeal even makes it heart-healthy.
While I’ve been eating a predominantly plant-based diet for years, I have a few staples I enjoy over and over again. They are easy to make and take only a few minutes as well as just a few ingredients. I love this recipe in any season!
This oatmeal bowl is
- warm
- filling
- creamy
- rich
- a little salty and sweet
- and it has chocolate and nut butter in it!
You can choose to either thoroughly mash the banana or just chop it into little creamy bits. Personally, I like to mash it up! Did I mention the chocolate and nut butter? I just thought I’d make sure you noticed the heaping scoop. My favorite! It adds to the creaminess of the bowl. Adding one mashed banana is key to the sweetness as well as making the oats smooth and creamy,
This bowl is so filling that once I’ve had it, I’m usually satisfied for hours. Remember to top this creamy goodness with strawberries or any other fruit you like. Strawberries are my choice as they give the oatmeal mixture a subtle sweet and tart combination that goes so well with both the chocolate and the nut butter.
Ingredients
- 3/4 C rolled oats
- 1 + 1/2 C water
- 1 Tb cocoa powder
- 1/2 tsp vanilla
- Pinch of salt
- 1 banana chopped (fresh or frozen)
- 1 cup strawberries
- 1 Tb peanut butter or nut butter of choice (or more if you’re like me! )
- Optional: Drizzle of maple syrup
Instructions
- In a saucepan, combine water, oats, salt, vanilla, banana and cocoa powder.
- Cook over medium heat until all the water is absorbed (about 5-7 minutes).
- Pour oats into a bowl. Top with strawberries and nut butter.
- Drizzle with maple syrup for a little added sweetness if you like.
- Enjoy!
